Sometimes you have to make quick decisions, calculate the risk and finally hardly intervene, place trust in nature without being naive, insist when you have to, and act wisely at other moments, allow wines to follow their due course, learn from them, but avoid being manipulated.
And if total control is comforting, intuition from which useful lessons may be drawn, must not be overlooked.
